Kale Bowl with Blueberries!

This bowl is a nutrition powerhouse complete with antioxidants, fiber, protein and more! Don't let the title scare you away - give it a try for breakfast or an on the go lunch!


Ingredients:
  • 1/4 cup chopped kale
  • 1/2 cup plain Greek yogurt
  • 2 tbsp. cooked farro, buckwheat, or quinoa (or combination)
  • 2 tbsp. slivered almonds
  • 1/2 cup blueberries
  • 1 tbsp. roasted pumpkin seeds, flaxseed, hemp hearts, or chia seed
  • 1 tsp. lemon Juice
  • 1 tsp. olive oil
  • sprinkle sea salt

Toss together and enjoy!
