Are you looking for a quick and simple dinner that also provides fantastic leftovers? Look no further than this frittata recipe. This recipe is very versatile. You can switch out the veggies, cheese, and/or herbs to whatever your preference may be. This recipe would go well with roasted potatoes and a side salad to make it a more hearty meal. Veggie Frittata Ingredients: Assorted vegetables, diced (one good combination is broccoli, spinach, and onion however feel free to get creative with what you have in the fridge). 3 Tablespoons olive oil 6 Basil leaves, diced 3 cloves garlic, minced 8 eggs 3/4 cup plain unsweetened almond milk (you can also substitute regular milk) 1 1/2 cup shredded cheese. Toast is an easy breakfast food especially on those mornings where you're pressed for time. However, toast with jam and butter is not the healthiest nor the most filling option. Try some of these ideas to keep you full and energized throughout your morning.   1.) Whole Wheat Toast with Peanut Butter and Fruit Top a piece of whole wheat toast with 1 TBSP of natural nut butter, 1/4 of a banana, a handful of blueberries, and cinnamon sprinkled on top. For a little extra sweetness, try adding some shredded coconut on top. 2.) Sprouted Grain Toast or Whole Wheat Toast Topped with Avocado and a Soft Boiled Egg Take a piece of toast and top it with smashed avocado and a soft boiled egg. Healthier Banana Muffins

Make a batch of these muffins to have around for a healthy snack or breakfast on the go! Double the recipe if you want to freeze some for later! Healthier Banana Muffins Ingredients: 2 cups whole wheat flour 1/2 cup rolled oats 1/4 cup coconut oil 1/4 cup applesauce 1/4 cup butter, softened to room temperature 1/4 cup honey 1/4 cup brown sugar 3-4 ripened bananas, mashed 2 eggs, beaten 1 teaspoon baking soda 1/4 teaspoon salt Optional: Walnuts Directions: Preheat oven to 350 In a large bowl, mix coconut oil, applesauce, butter, honey, brown sugar, eggs, and bananas. In a different bowl mix whole wheat flour, oats, baking soda, and salt. Mix the dry ingredients slowly into the wet ingredients. Stir or use an electric mixer until smooth. Stir in walnuts if desired. Scoop mixture into lined muffin tins. Bake 20-30 minutes (depending on the size of muffin tins you use) and until a toothpick comes out clean. Let cool slightly and enjoy.

Kitchen Hacks for a Healthier Week

Do you feel a little rushed during the work week? Is it difficult to prepare healthy meals after a long day of work? These kitchen hacks may make all the difference in helping you to have a week of healthy breakfasts, lunches, and dinners! 1) Cook up a big batch of quinoa or rice (or both) to use for meals throughout the week . You can add these to salads for a more filling lunch, scramble up with some eggs for a hearty breakfast, and use them for simple dinners throughout the week. If you want to make a larger batch, both quinoa and rice can be frozen for later use. 2) Prep some overnight oats.  Overnight oats make a great healthy quick meal in the morning. You can prep the containers ahead of time making a different variety for different days of the week! To make: put a serving of oats along with any toppings (chia seeds, dried cranberries, nuts, nut butters, etc) in a jar, add milk or non dairy milk of your choice and put in the fridge until you're ready to eat it.
