Ingredients:
  • 1 1/2 lb sweet potatoes
  • 1/3 cup quinoa
  • 1 cup old fashioned oats
  • 1 can (15oz) black beans (drained and rinsed)
  • 1/2 small red onion, diced
  • 1/2 cup lightly packed fresh cilantro, chopped
  • 2 tsp cumin powder
  • 1 tsp chili powder
  • 1 tsp chipotle powder or smoked paprika
  • 1/2 tsp cayenne powder (optional)
  • 1/2 tsp salt
  • oil, for cooking
  • whole wheat hamburger buns (optional)
  • burger fixings (avocado, guacamole, lettuce, cheese, pickles, etc)
Directions:
  1. Preheat over to 400 degrees F.
  2. Slice sweet potatoes lengthwise and place side down on baking sheet. Bake 30-40 minutes and remove from oven.

  9. Pan fry burgers (3-4 minutes per side)
  10. Toast buns if preferred.
