National Picnic Month

With all this talk about blueberries, we ALMOST FORGOT to mention it is also NATIONAL PICNIC MONTH!!

What is that???

National Picnic month is when we celebrate the love of being outside enjoying each others company by having a nice relaxing picnic. It's a time to celebrate the open air, nature all it has to offer.

Did you know???

In contemporary usage, picnic can be defined simply as a pleasure excursion at which a meal is eaten outdoors, ideally taking place in a beautiful landscape. Picnics are often family-oriented but can also be an intimate occasion between two people, or a large get-together, company picnics and church picnics.

On romantic and family picnics a picnic basket and a blanket are usually brought along. Outdoor games or some other form of entertainment are common at large picnics.

Formerly, picnic meant a potluck, an entertainment at which each person contributed some dish to a common table. 

With the current limitation of large gatherings, picnics could be a great way to visit with friends/family in an outdoor, socially distant, style! They are also a great way to enjoy some delicious healthy foods with a beautiful view! Check out this recipe:

Corn Relish / English Pea Salad

Corn Relish / also called English Pea Salad is usually found in many picnic baskets instead of the usual jar of sweet pickles. This dish is used as a side condiment and ate along side your meals or used to top hot dogs with. This condiment is served sweet and cold and is popular during the hot summer months.

Sweet and Sour Marinated English Pea and Corn Salad > Call Me PMc
Ingredients: 
  • 1 can English peas drained

  • 1 can shoe peg corn

  • 1 small jar pimentos

  • 1 small diced onion

  • 1/2 cup diced celery

  • 1/2 cup mixed color bell peppers

  • 1/2 cup oil

  • 1/2 cup vinegar ( I like apple cider vinegar)

  • 1/2 cup of sugar

  • 1 teaspoon salt
Directions: 

Small Dice onions and celery.

Boil sugar and vinegar until dissolved, add oil and stir.

Turn heat off and add all other ingredients. Mix.

Place in a jar and refrigerate over night before eating.
