Tasty Tuesday: BBQ Foil Packet
BBQ Chicken Foil Packs
Ingredients:
- 4 boneless, skinless chicken breast, cut up into 1-inch pieces
- 1 1/2 cups of BBQ sauce of your choice
- 2 cups of pineapple cubed, drained if canned
- 1 pepper (green, red or yellow), chopped
- 1 onion, chopped
- cilantro, optional
Directions:
- Cut 4 large pieces of tin foil (this tin foil will be used to hold your meat and vegetables).
- Divide chicken evenly into each of the 4 tin foil sheets.
- Top with equally divided pineapple, peppers and onion.
- Bring up 2 sides of foil over chicken so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.
- Place folded foils on preheated grill. Cook for 10 minutes, flip packets over and cook for 10-15 more minutes or until the chicken is fully cooked in the center.
- Once chicken is fully cooked, your packets are ready to eat. Garnish with cilantro and enjoy!
