Tasty Tuesday: BBQ Foil Packet

BBQ Chicken Foil Packs

Ingredients:
  • 4 boneless, skinless chicken breast, cut up into 1-inch pieces
  • 1 1/2 cups of BBQ sauce of your choice
  • 2 cups of pineapple cubed, drained if canned
  • 1 pepper (green, red or yellow), chopped
  • 1 onion, chopped
  • cilantro, optional
Directions:
  1. Cut 4 large pieces of tin foil (this tin foil will be used to hold your meat and vegetables).
  2. Divide chicken evenly into each of the 4 tin foil sheets.
  3. Top with equally divided pineapple, peppers and onion.
  4. Bring up 2 sides of foil over chicken so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space on sides for heat circulation and expansion. Fold other sides to seal.
  5. Place folded foils on preheated grill. Cook for 10 minutes, flip packets over and cook for 10-15 more minutes or until the chicken is fully cooked in the center.
  6. Once chicken is fully cooked, your packets are ready to eat. Garnish with cilantro and enjoy!
