Tasty Tuesdays: Grilled Watermelon & Balsamic Chicken

Grilled Watermelon & Balsamic Chicken (by: The Creative Bite) is a tender chicken breast topped with grilled watermelon, soft goat cheese, fresh mint and a drizzle of balsamic reduction for a fresh summer meal that is healthy and delicious.

Ingredients
  • 1 lb boneless skinless chicken breast
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8, 1" wedges watermelon
  • 4 oz. soft goat cheese
  • 6 leaves fresh mint, finely diced
  • 1/4 cup balsamic reduction
Instructions
  1. Heat your grill to medium. 
  2. Season the chicken breasts with salt and pepper and cook for 6-8 minutes or until they are no longer pink in the center. 
  3. Add the wedges of watermelon to the grill and cook 1-2 minutes on each side, or until grill marks are evident.
  4. Remove the chicken and watermelon from the grill and allow the chicken to rest for 5 minutes so the juices set. 
  5. Meanwhile, cube the watermelon into 1 inch pieces.
  6. Top the chicken with watermelon, goat cheese, mint and balsamic drizzle. 
  7. Serve immediately.
