Tasty Tuesdays: Grilled Watermelon & Balsamic Chicken
Grilled Watermelon & Balsamic Chicken (by: The Creative Bite) is a tender chicken breast topped with grilled watermelon, soft goat cheese, fresh mint and a drizzle of balsamic reduction for a fresh summer meal that is healthy and delicious.
Ingredients
- 1 lb boneless skinless chicken breast
- 1 tsp salt
- 1/2 tsp pepper
- 8, 1" wedges watermelon
- 4 oz. soft goat cheese
- 6 leaves fresh mint, finely diced
- 1/4 cup balsamic reduction
- Heat your grill to medium.
- Season the chicken breasts with salt and pepper and cook for 6-8 minutes or until they are no longer pink in the center.
- Add the wedges of watermelon to the grill and cook 1-2 minutes on each side, or until grill marks are evident.
- Remove the chicken and watermelon from the grill and allow the chicken to rest for 5 minutes so the juices set.
- Meanwhile, cube the watermelon into 1 inch pieces.
- Top the chicken with watermelon, goat cheese, mint and balsamic drizzle.
- Serve immediately.
